Here at Big Daddy´s Old Fashioned Barbeque, we practice traditional smokehouse barbecuing, using imported hickory wood. In smokehouse BBQ, the wood and fire are in a compartment separate from the meat. The heat and smoke are then vented into the smokehouse and into the meat...which adopts the flavor of the wood. Barbeque is a science and an art! The scientists at Big Daddy´s Old Fashioned Barbeque know that moving the wood around while cooking promotes evenness. Controlling heat and smoke must be done with precision. As artists, we work from instinct knowing what will make our meat taste great and make your sensory experience the very best.
