Here at Big Daddy´s Old Fashioned Barbeque, we practice traditional smokehouse barbecuing, using imported hickory wood. In smokehouse BBQ, the wood and fire are in a compartment separate from the meat. The heat and smoke are then vented into the smokehouse and into the meat...which adopts the flavor of the wood. Barbeque is a science and an art! The scientists at Big Daddy´s Old Fashioned Barbeque know that moving the wood around while cooking promotes evenness.
