The Shropes had previously owned " The Bushkill Street Saloon" in the early 1900's - a gas station,pool hall & speakeasy, located diagonally across the street from our present location.
In 1935 Gehly & Dorothy Shrope (Melinda's Mother & Ashley's Grandmother) established Shrope's Cafe on 11th & Wood Ave. Dorothy inherited the Restaurant/Bar from her husband, Gehly Shrope, in 1952, and continued to do so until 1976. Dorothy was one of the first women in Northampton Co. to hold & operate under a liquor license. Melinda, Dorothy's only daughter, inherited Shrope's Cafe in 1976 at the age of 20. Eventually, Shrope's Cafe would become Ashley's Signature Restaurant & Lounge.
In 1997 Melinda changed the atmosphere and name of the establishment. The restaurant had been named for her only daughter, Ashley. Melinda carries on the tradition that began with Dorothy & Gehly years earlier, serving the Lehigh Valley for over 80 years!
