I believe with the hard work and motivation that 20 years of Naval service as a Senior Chief Petty Officer has taught me, I will make this restaurant a staple in Randolph county by providing quality goods at an affordable price with reliable service in a market that is deprived of a product it had grown accustomed to.
My goal is to bring good BBQ back to Randolph county and bring BBQ back to the people. I have perfected my techniques of seasoning the Boston Butts with a dry rub which I have developed, slowly cooking Boston Butts to ensure tenderness while not over-smoking the meat, a common complaint of BBQ connoisseurs. I use a small amount of local pecan wood chips to ensure a subtle hint of smoke while not overpowering the pork taste. After resting, I remove fat and connective tissue to allow for simple pork goodness. I have a time tested “secret” sauce that my Grandmother invented which is ketchup based with just a hint of sweet and spicy flavor which adds to the flavor of the hand pulled pork. Served on a bun, eaten alone or on white bread, this is the epitome of what I believe the people of Randolph County want. Additionally, I will have hand cut French fries, another of the staples that the community has come to associate with a local BBQ restaurant. Combine that with BBQ chicken, hand patted hamburgers, ¼ pound hot dogs, Brunswick stew, and a generous kids menu that will please even the pickiest child (or adult!), and you have what, I believe, will be an institution that would rival any of the big city BBQ chains from a local who decided to return home to try to give back to the community.
