Al and Lucille Bieker began business with Al’s sister in the Plantation Grill in Salina, Kansas. They soon decided they wanted their own place, so they packed up their stove and moved to Hays. Local history states that they built the building from the ground up, however it is said they obtained an Offficers Quarters from Walker Airforce Base and moved it to it’s present location at 700 Vine Street. They remodeled it to accomodate their new restaurant, Al’s Chickenette. (The original color scheme was blue and pink with hardwood floors) Many thought it would never go but on April 23, 1949, they opened the doors and started serving fried chicken. With the help of the people of Hays and the surrounding area, they saw their dream come true. Many older visitors still ask about Al and Lucille and talk about the days when Al was in the kitchen.
Al and Lucille Bieker retired in 1967 when they sold the Chickenette to Melvin and Annette Ruder. The Ruder’s continued the tradition until August 1976 selling the restaurant to Richard and Donna Schmidt. Richard passed away in October 1998. Donna continued as owner with their younger son Noel managing the restaurant. Like Al, many miss Richard sitting at his special table by the kitchen door and his witty conversation.
Although Al passed away in June 1969, we were still visited by Lucille, now Mrs. William Befort. A very special feeling will always be held for her. We thank her for all the help she has given from her many years of experience spent here. Lucille passed away in October 2009.
The restaurant remains much as it was. Every effort is made to keep the tradition started so many years ago. We would like to think that Al Bieker would still be proud to have his name carried on while we try to live up to his ideals.
We strive to keep Al's a local tradition and a staple in out Hays community.
