Al and Lucille Bieker began business with Al’s sister in the Plantation Grill in Salina, Kansas. They soon decided they wanted their own place, so they packed up their stove and moved to Hays. Local history states that they built the building from the ground up, however it is said they obtained an Offficers Quarters from Walker Airforce Base and moved it to it’s present location at 700 Vine Street.
