The Hashimoto family, from Osaka in Japan, has been brewing saké since 1822 in a region with over 500 years saké history and heritage. Dojima is the first Japanese owned saké brewery in the UK, on a mission to brew great saké and share its culture.
The Hashimoto family are saké pioneers. Hailing from Osaka in Japan, they come from a family that has been brewing since 1822. The region is also steeped in over 500 years of saké brewing history.
The family brewery is called Kotobuki Shuzo and is based in the town of Tonda outside Osaka. As well as brewing great saké, they were the first brewery to start making craft beer in Osaka.
Now the family have set up Dojima Saké Brewery, the first Japanese owned brewery in the UK. The brewery is still under construction as you'll see from our Facebook posts, but we get closer to completion every day.
