At T/ACO Chef Matt Collier, who honed his skills while opening Chicago’s famed Big Star Taco, as well as working under luminary Chef Paul Kahan at Avec and Blackbird before opening T/ACO’s sister restaurant in Boulder, has created a menu that’s been hailed as simple, fresh, and utterly addictive. Each taco—along with a fresh ceviche, salad, and other surprises—is designed to excite the palate, combining simple flavors in deliciously inventive ways. Everything at T/ACO is housemade daily, including the tortillas, chips, fresh salsas, and guacamole—and almost everything is naturally gluten free.
The dining room and bar, designed by Robin Smith Designs, is a sleek, inviting take on the Old West, with playful touches including a beetlekill pine community table and bar and a floor-to-ceiling wall murals. Of course, no taqueria would be complete without a festive bar menu, including unforgettable specialty margaritas and cocktails (using fresh-squeezed juices, of course!) and a dazzling selection of unique tequilas. The space is designed to buzz with energy, to reflect the joyful nature of the menu, and the bar at T/ACO simply doesn’t disappoint. You may come (again and again!) for the food, but you’ll want to stay for the cocktails.
To keep the party going, T/ACO will feature a late night happy hour with food and drink specials. Distinctive tequila tastings and events will supplement regular specials like Taco Tuesdays and Fiesta Thursdays, and an all you can eat and drink Sunday Football Brunch is coming soon.
