The process of cooking with coal has been around for nearly 500 years. It can be traced back to Naples, Italy, where coal was used as the main source of heat in ovens for cooking. Here at Nick & Nino’s, we have brought back this ancient art of cooking pizza and perfected it.
So what makes our pizza taste so special? First, because we cook with coal, the internal temperature of the oven reaches 1000oF. This means cooking time is reduced drastically, and results in a homemade crust that is crisp on the edges and remains chewy throughout. Plus, the short cooking time doesn’t allow the crust time to dry out and cooks the pizza to perfection.
Each of our pizzas is made with only the freshest ingredients and the toppings that are prepared daily. All 21 of them. We caramelize our vegetables and slice and cook the meat in house. One of the main features of our pizzas is the sauce that has an authentic old-world flavor. We use real Italian plum tomatoes that have very little citric acid so all you taste is the true flavor of the tomato. Because of the high temperature of the coal oven, the sauce does not have time to overcook. This is why the sauce on our pizzas stays nice and bright red unlike most other pizzas where the sauce turns slightly darker red due to a longer baking time.
