The long answer... Kaukauna Cheese is the delicious result of Hubert Fassbender's dedication to cheese-making beginning in the early 1900's.
Fassbender, the founder of Kaukauna Cheese, pioneered a method of creating spreadable cheese, known as the cold-pack method. This consists of grinding natural cheese to a fine texture and, without heat, combining it with other dairy ingredients and flavors such as wine and spices. Processed cheese or mixed cheeses combine ingredients using heat, but Fassbender's cold-pack method allows the natural flavors to really come through and the cheese remains spreadable at room temperature.
Our founder's love of cheese was only outmatched by his dedication to quality. Today, Kaukauna Cheese still lives up to his powerful words, “We must never waste our care nor risk the flavor of Kaukauna Cheese trying to work with cheese that isn’t worthy of the effort.”
