Cosmic Cowboy Grill, a gourmet healthy eating restaurant, is slated to open in Coeur d’ Alene this Spring. The concept will serve locally-sourced, grilled-to-order meats, delicious farm-fresh vegetables, creative salads, sandwiches and wraps, and scrumptious desserts. Steve Eller, owner and Chief Wrangler of the new concept, is starting this restaurant to fill a large hole in the local dining landscape – healthy food served in innovative and interesting ways. “This style of cuisine has become extremely popular in places like Seattle, Portland, and Austin,” Steve says. “With a large fitness community and new people moving to the area, there seems to be a large pent up demand for this type of food.”
Cosmic Cowboy Grill is a brand new concept that has been created to present the food trends that are popular in the major coastal markets in a way that will appeal to tastes of the Inland Northwest. While the restaurant will serve unique vegetable sides like butternut squash and quinoa or roasted Brussels sprouts with blue cheese and pistachio, it will also serve grilled meats cooked over an open flame and grilled salmon. The name, Cosmic Cowboy Grill, was chosen to represent this combination. Back in the 1970’s the original Cosmic Cowboys, such as Willie Nelson, Janis Joplin, and Jerry Jeff Walker, melded rock, country, folk and blues to create an entirely new style of music. Steve was moved by the ingenuity of the authentic cosmic cowboys. “They embraced new ways of doing things (cosmic) while remembering the values that made us great (cowboy).”
The management team of the restaurant embodies this same collaboration. Steve, a recent transplant to the Inland Northwest, moved here from Austin, Texas, to gain a more relaxed life-style where opportunities to get outside and enjoy nature are plentiful. Chris White, General Manager and a graduate of the Inland Northwest Culinary Academy, has lived Pacific Northwest for his entire life. Together these two have devised a menu inspired by the cutting-edge recipes found in the best Austin restaurants but cooked in ways that will appeal to Inland Northwest sensibilities.
Prior to becoming a chef, Chris worked in the health club industry for 20 years. When asked about the Cosmic Cowboy Grill menu, Chris said, “When I worked in health clubs, I noticed that diet was a big part someone’s success in achieving their fitness goals. Cosmic Cowboy Grill will be a great place to eat for people that want great food but want it to be healthy and nutritious too.”
Chris and Steve want to be the go-to spot for those craving sophisticated food including gluten-free, Paleo, vegetarian, vegan, and low-carb gourmet options. Chris explained, “Cosmic Cowboy Grill will offer scratch made, healthy, straightforward food that celebrates our region’s bounty. We will be changing our menu seasonally to ensure that our customers eat foods at the peak of their ripeness while leaving as small a carbon footprint as possible.” Everything will be home-made, farm-fresh, and served in a fun, relaxed environment. Steve added. “We hope to make the restaurant a centerpiece of the local fitness community and are even planning for special menus to support athletes prior to big events in the area, like Ironman and the CDA Marathon.”
Cosmic Cowboy Grill will be located at 412 West Haycraft in Couer d’Alene which is at the corner of Appleway Avenue and US Highway 95. This location, across Interstate 90 from Kootenai Health, features easy access and ample parking making it ultra-convenient for lunch or dinner. The fresh-casual service style allows customers to order promptly, select the table of their choice, and receive their food faster than traditional sit-down restaurants.
