Artisan Sea Salt Flavours:
Pure: Just pure, natural flaked sea salt
Citrus: We zest Lemons and Limes, dry the zest, and add it to the pure sea salt. It has a nice citrusy aroma and a beautiful yellow color. It’s lovely sprinkled on salmon or scallops
Rosemary: Rosemary from our garden is air dried, coarsely ground, and added to the pure sea salt. It has a nice green color and an incredible aroma of rosemary. It’s delicious sprinkled on roasted potatoes, chicken, and lamb.
Spicy Chili: Hot red peppers that we grow in our greenhouse are dried, ground, and added to the pure sea salt. The color varies from orange to pink, to red, dotted with the dark red of the chili’s skin. This is spicy and we think it’s great on corn on the cob with butter and lime juice, or sprinkled on prawns.
Red Wine: Currently we are using a French red wine of medium body. We rehydrate the pure sea salt with the wine, bring it up to a boil for 1 minute then it is poured into a glass vessel where it dehydrates. The salt retains a mild wine aroma and looks stunning sprinkled on one’s food.
Sea Veg: We use only Canadian seaweed for this salt. It is a blend of wakame, dulse, sea lettuce, and nori which is added to the pure sea salt. Kids and adults like it on popcorn and steamed rice and veggies.
Smoked: Pure sea salt is put into our smoker for 6-7 hours with our secret blend of wood until it reaches a pleasing color, aroma, and amazing smoky flavour. Try it on steaks, slices of ripe tomatoes, or sprinkle it on scallops with a maple cream sauce.
From time to time we will introduce new flavours of sea salt when summer produce comes into season.
We currently offer two sizes of packaging; a small metal tin with a slide on/off lid that fits in people’s pockets/purses and makes a lovely gift when travelling or to just use when away from home. People say it has a retro look and feel to it. Our larger size is a glass jars that hold 45 grams of salt. The flavour is labelled with a round sticker on the lid that also includes our email address.
Clever Crow is a small batch artisan sea salt company operated by Lia and Brian McCormick. We go out into the waters a little north of Courtenay and collect buckets of sea water by hand which are filtered and boiled down, then simmered slowly until beautiful salt crystals are formed. These salt crystals are slowly dried and then packaged as Pure, or flavoured. We are very proud of our product and we love the clean, pure taste and crunch of the ‘fleur de sel’ style crystals. All of our blending and packaging is done at a government certified food safe kitchen in Courtenay.
