Bubble tea is a most refreshing and very delicious tea drink. Besides green or black tea a choice of concentrated fruit juices, milk, yoghurt and so-called “toppings” are used as ingredients. These can be the traditional tapioca pearls (produced from cassava root starch) but also pieces of jelly or popping boba (small balls filled with fruit juice).
By the way, the name “bubble tea” does not derive from the tapioca pearls. Instead, it refers to the ultra fine foam that emerges on the surface when shaking the tea with fruit sugar, ice and milk.
Bubble tea was invented in the 1980s in a cosy tea house in central Taiwan, home of the premium-quality Formosa teas. By now, bubble tea is well-known far beyond Taiwan’s borders. At first, the neighbouring Asian countries caught the bubble tea fever. And soon, it spread via the North American Chinatowns all across Canada and the USA. And this cult drink’s triumph through Europe has already begun.
