Flour, water, salt. and natural leaving agent is about all we need to make really good bread. We have stayed true to the art of bread making that goes back thousands of years. We use local flours, and all of our breads are made in small batches. We do this so each loaf a bread is made with the most care. This gives us more control over the fermentation of our bread and allows us to maximize the quality of each loaf.
