Pyramid Bistro has the historic distinction of being named the first nutritarian restaurant a term coined by Dr. Joel Fuhrman which describes a person who consumes the most micro nutrients per calorie. His equation, nutrient divided by calories equals health is the guiding principle of a nutritarian. You can find nutrient guides and some of our recipes in his book “Eat to Live, Cookbook”.
When we set out to open a restaurant in Aspen, we wanted to combine the warmth of grandmother’s cooking with the understated refinement of a French farmhouse-style bistro. In 2000, we opened our doors and invited guests to join us in an atmosphere of approachable, sophisticated charm. During the ski season, visitors come for our hearty winter dishes and our intimate wine room. During the summer, they'll come by for a glass of white wine and fresh oysters.
