We respect the animal and farmer by taking care to produce exceptional, handmade dishes with as little waste as possible.
At Popper's at the Mill we speciallize in charcuterie, the culinary art invoking traditional craft-techniques for preparing, smoking, curing and processing meats. Chef/Owner John "Popper" Medlin enhances this tradition with his own style and taste by infusing his small-batch recipes with seasonal flavors, local ingredients and personal care.
