In 2014, award-winning chef Paul Hynes and his wife Edwina Hynes opened La Côte Seafood Restaurant on the quays in Wexford with a dream to create a modern Irish seafood restaurant that would channel the couple’s passion for good food and fine local produce, and showcase Paul’s wonderful skill and natural talent for cooking seafood and Edwina’s flair for front of house.
