Aling Taleng's Halo-Halo was started in 1933 by Catalina Zaguirre in Pagsanjan Laguna.
With a Php10 as a capital, Catalina Zaguirre [ a.k.a. Aling Taleng ] managed a small store in front of the house. It was just like [other such stands] that you see among local households. There were no tables for customers then. The only table in the store was the one that contained all the ingredients and utensils used to make the iced dish.
The customers, mostly neighbors, kept on coming back as they found the recipe is different from all the others. Combination of different ingredients, setting the halo-halo apart from the ordinary ones served up in other stores or even fast-food chains.
Traditional halo-halo is composed mainly of crushed ice, sweetened banana, sweet potato, gulaman, sago, etc. But Aling Taleng's Halo-halo takes pride in its six main ingredients: mongo, beans, macapuno, kundol, ube and tubo.
The recipe Aling Taleng developed is still used up to now! There are no change on what the customers have learned to love!
