The Waffle Cabin® was a concept started by Peter Creyf & Ingrid Heyrman. We originally called it "Leo's – Gaufres de Liège" operating from a pushcart at Quincy Market in Boston in May 1998. After varied results at this location and one at Boston Common Park we decided to try a new venue - ski resorts.
We sent out pre-packaged waffles to different resorts in New England and interest in our product led to an introduction. We gave a presentation and served our freshly made waffles - That was all it took, they simply couldn't resist.
We started in December 1999 and immediately we felt a spar...
Not so many years after the American Revolution, at the hearth of a colonial house in Westminster, Massachusetts, our first Master Baker pulled a batch of warm crackers from the oven, and a New England tradition was born.
