Soft blue and silver leathers, in textures of sturgeon, perch and caviar, rich ebony macassar, limed oak flooring, sculpted carpets and iridescent pearl mosaics create a sophisticated but relaxed atmosphere of comfortable luxury. Developed by the international experiential design studio Blue Sky Hospitality from London, the overall concept of SAHIL restaurant is inspired by the coastline of Baku and the surrounding Caspian regions, expressed in a refined, layered cosmopolitan style blending rich materials and contemporary aesthetics that would not look out of place in New York or Paris.

The experienced kitchen team prepare superb regional specialities, balancing classic flavours with creative composition.The specially designed charcoal grill produce just the right level of intense heat to sear the meat perfectly and produce tender, aromatic kebabs.

The Sahil cocktail bar has a specially designed vodka freezer holding premium labels at just the right temperature below zero, which can be tasted neat or in some creative cocktails using local ingredients such as saffron, quince, pomegranate and oregano.
