We make all of our ice cream in our little riverside shop. We use 40% heavy cream, whole milk, Jacobsen salt, cane sugar or brown sugar and egg yolks to make a French-style custard. We flavor that custard with housemade ingredients (such as fruit curds, toffee, caramel, pecan brittle and marshmallow creme), then we churn it in our Emery-Thompson batch freezer. After a night in the deep freeze, it's ready to scoop! We make ice cream all year round. For our Belgian Frites we buy Kennebec potatoes. They are cut to 3/8", rinsed and soaked in cold water, air-dried, then fried once at a low temper...
