Chef Bill Waldroff grew up in South Texas, eating BBQ. As he got older and started to cook, he learned the South Texas secrets to smoking meats and the fine art of REAL BBQ. At most parties, he would grill the meat. It was always well received and enjoyed by everyone. At the insistence of several friends and the support of Mr Michael Waight and the Snooty Fox, the South Texas Bar-B-Que & Smokehouse was born.
